An integral part of the day’s festivities will happen in the Demo Tent which will host a rolling series of chef demonstrations, live panel debates, artisan workshops and tastings hosted by Ed Smith. Entry will be free all day with guests able to drop in and out as they like. Ed is an award winning journalist, blogger and recently author of On The Side published last year by Bloomsbury Books.
Other notable demo’s will feature London’s most renowned and revered pie making chef Calum Franklin of Holborn Dining Rooms who will show us some of the techniques that have allowed him to create his pies of distinction – and he may bring some samples to taste also! The Rare Breed Survival Trust and Slow Food UK will host a live panel debate entitled The Future of Meat with notable panelists. Audience participation will be encouraged and the talk will be streamed live. Matt from Cobble Lane Cured will show us how to expertly butcher half a pig and we have Jose Pizarro demonstrating his expert ham carving skills as well as chefs such as Nicholas Balfe showing us how they use cured meats in their cooking.
For those wine and beer lovers amongst us, we have free to attend masterclasses from both Jascots Wine Merchants and Fourpure Brewery who will show us how to pair cured meats with their wonderful range of products. In addition, The World Cheese Awards will be guiding us through a ‘champion cheese masterclass’ including a tasting of the cheese recently crowned Supreme Champion at the World Cheese Awards 2018.
